Theresa’s “Lucky Four” Lean & Green Pancakes

With St. Patrick’s Day around the corner, everyone is feeling lucky. Traditionally, four-leaf clovers are considered the prime symbol of good fortune, with each leaf associated with a specific meaning: faith, hope, love, and, of course, luck.
In that spirit, and using just four main ingredients, you can make a lean and lucky breakfast. Spinach gives these flapjacks a special color, and adding your favorite protein powder gives you the boost you need to start your day. Bon appetit! Or shall we say, Sláinte!
Ingredients:
    • 1 cup packed fresh spinach
    • 2 ripe bananas
    • 2 large eggs
    • 1/2 cup vanilla protein powder (choose plant-based or whey, mixed with water or your preferred milk)
    • Cooking spray or oil
    • Sugar-free maple syrup to top
 
Instructions:
    1. Blend Ingredients:
      • In a blender or food processor, add spinach, ripe bananas, eggs, and protein powder.
      • Blend until smooth and well-combined. If the batter seems too thick, add a splash of water or milk/almond milk to thin it out.
    2. Heat the Pan:
      • Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil of your choice.
    3. Cook the Pancakes:
      • Pour small portions of the batter (about 1/4 cup per pancake) onto the skillet.
      • Cook for 2-3 minutes until small bubbles form on the surface, then flip and cook for an additional 1-2 minutes on the other side until golden brown.
    4. Top with Sugar-Free Maple Syrup (Cary’s Sugar-Free Maple Syrup, my favorite)
